>I’d like to share some of my favorite recipes. These are mostly dinner recipes that work well as left overs since I have a day job and can’t bear to make my lunch at 6 AM.
First up, Giada De Laurentiis’ Rigatoni with Creamy Mushroom Sauce. I have a lot of friends who don’t eat mushrooms, so I tend to eat this one as leftovers for a few days. It warms up nicely in my work microwave.
The mascarpone cheese, the mushroom variety, the garlic, the shallots, oh my!! 🙂 I think this would be a great way to sneak some veggies to kids. The sauce is phenomenal and they won’t even realize what they’re eating!
Next up, Paula Dean’s Creamy Squash Soup. Apparently I tend to like food that is creamy. This soup is to die for. I made it two years in a row at Thanksgiving and now it’s a family tradition! It is fairly healthy (except for the heavy cream!) and delicious.
It is so easy to make for anyone that can follow a recipe. I used an immersion blender instead of a food processor or blender. So much easier when you don’t have to pour hot soup into another contraption! This photo is just a prop, as I couldn’t find a picture of my soup anywhere! It got eaten up too quickly.
