I was in the mood for a lemony summer treat, so I made lemon bars. I love anything lemon during the summer- lemonade, lemon bars, lemon in every kind of food I make… I still remember the first time I had lemon bars. I was in high school and someone brought them during our P.E. (yeah I know…) potluck. It was love at first bite.
This makes enough for 15 people depending on their appetite, so I packed them up and brought them to friends. I probably could’ve eaten them all but I didn’t want to go into sugar shock. Recipe from here, but I added lemon zest to give it some extra lemon flavor. So easy and so delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9×13 inch pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
- Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
